This Spam Sandwich features golden egg-coated bread, crispy luncheon meat, buttery spinach, and creamy mayonnaise. It’s a quick, hearty, and flavorful dish perfect for breakfast or a snack!
A Comforting Breakfast or Snack
Spam Sandwich is one of my go-to breakfasts because it’s quick, delicious, and my children love it—they even ask for it regularly.
There’s something so comforting about the combination of savory spam, creamy cheese, and egg-coated bread that always hits the spot in the morning.
To make the sandwich a little healthier, I like to add spinach for some extra nutrients. Since spinach is said to contain oxalic acid, I usually blanch it first to remove any excess, but this step is optional. If you’re short on time or don’t mind the oxalic acid, you can skip the blanching entirely.
For the spam, I use my homemade version, which has just the right amount of fat for flavor. Because it already contains some fat, I don’t need to add any extra oil when pan-frying it, especially since I use a nonstick pan. This way, the spam gets perfectly golden and crispy without becoming overly greasy, keeping the sandwich lighter yet still indulgent.
