Homemade Spam Breakfast Sandwich

- 2 slices sandwich bread
- 2 eggs
- 2 slices luncheon meat
- 50 g spinach
- 20 g butter
- 1/4 tsp salt
- 1/4 tsp black pepper
- an appropriate amount mayonnaise
- 1 slice cheese
Prepare the ingredients:
Cut the sandwich bread into halves.
Slice the luncheon meat into suitable pieces.
Crack the eggs into a bowl, add 1/4 tsp salt and 1/4 tsp black pepper, and whisk until well combined.
Wash the spinach and blanch it: bring a pot of water to a boil, add the spinach, and blanch for about 1 minute. Drain and set aside.
Pan-fry the luncheon meat:
Sauté the spinach and cook the egg:
In the same pan, add 20g butter and heat over low heat. Once the butter melts, add the blanched spinach and sauté briefly.
Pour the whisked egg mixture over the spinach and let it cook gently. Place the sandwich bread on the egg mixture while it is still runny, allowing both sides of the bread to get coated.
Cook over low heat until the egg is set on one side. Flip the egg and bread over and continue cooking until the egg is fully cooked.
Assemble the sandwich:
Fold the edges of the egg inward to match the shape of the sandwich bread.
Layer the sandwich: place two slices of pan-fried luncheon meat on the egg, followed by one slice of cheese.
Squeeze an appropriate amount of mayonnaise on top and fold the sandwich bread together.
