Mango Pomelo Sago Recipe

- 60 g sago
- 1 pomelo
- 500 g mango 250g diced, 250g chunks for blending
- 250 g coconut milk
- 500 g milk 250g for mango smoothie, 250g for assembling
- 20 g condensed milk
Prepare the Sago
Bring a pot of water to a boil. Add 60g sago and cook over medium-low heat for 10 minutes, stirring occasionally to prevent sticking.
Turn off the heat, cover the pot, and let the sago soak for 20 minutes until translucent.
Strain the sago, rinse under cold water to enhance its chewy texture, and set aside.
Prepare the Fruits
Peel the pomelo and carefully extract the flesh, removing any white membranes. Place the flesh in a bowl.
Wash, peel, and pit the mango. Dice 250g into small cubes and cut the other 250g into chunks for blending.
Make the Mango Smoothie
In a blender, combine 250g mango chunks, 250g coconut milk, 250g milk, and 20g condensed milk. Blend until smooth and creamy.
Assemble the Dessert
In a serving glass, add a layer of mango cubes at the bottom, followed by some pomelo flesh.
Pour a small amount of milk to fill the gaps between the fruit layers.
Slowly pour the mango smoothie on top, allowing it to spread evenly across the fruits.
