Creamy Sesame Ramen with Spam and Ramen Egg

Ingredients

  • 1 pack instant ramen including seasoning and vegetable packets
  • 2 slices luncheon meat Spam, cut in half
  • 1 tsp cooking oil
  • 2 eggs 1 for egg yolk sauce, 1 for ramen egg
  • 3 cloves garlic minced
  • 1 tbsp sesame paste
  • 2 tsp mayonnaise
  • 3 pieces nori seaweed, some crushed, some left whole
  • 10 g chopped scallions

Instructions

Prepare the Luncheon Meat

  • Cut the luncheon meat into medium-thick slices and halve each piece. Heat a skillet over low heat and add 1 tsp of cooking oil. Pan-fry the slices until both sides are golden and crispy. Remove from the skillet and set aside.

Cook the Noodles

  • Bring a pot of water to a rolling boil. Add the ramen noodles and vegetable packet. Cook for 3–5 minutes or according to the package instructions, stirring occasionally to prevent the noodles from sticking.

Make the Sauce Base

  • While waiting for water to boil, mince the garlic and place it in a mixing bowl. Add sesame paste, the seasoning packet from the ramen, and mayonnaise. Stir until the ingredients are well combined. Crack one egg into a separate bowl and separate the yolk from the white. Add the yolk to the sauce base and mix until smooth.

Prepare the Broth

  • Scoop 2 ladles of the hot noodle water and pour it into the sauce bowl. Stir thoroughly to create a creamy broth. Pour the mixture back into the pot with the noodles and let it simmer briefly until heated through.

Assemble the Ramen

  • Transfer the noodles and broth into a serving bowl. Top with the pan-fried luncheon meat, a ramen egg (if pre-made or store-bought), crushed nori, and chopped scallions. Enjoy!
