Easy Scallion Oil Noodles with Aromatic Sauce
With just a handful of ingredients, you can create a comforting and aromatic dish that's perfect for any meal. The fried scallions and silky soy-based sauce make these noodles irresistible.

- 100 g green onions scallions: divided into sections for frying and finely chopped for garnish
- 300 g dried noodles
- 3 tbsp light soy sauce
- 2 tbsp dark soy sauce
- 1 tbsp oyster sauce
- 1 tbsp sugar
- 3 tbsp cooking oil
- 1 egg for soft-boiled egg
- white sesame seeds: as needed
Prepare the Sauce
In a small bowl, mix 3 tbsp light soy sauce, 2 tbsp dark soy sauce, 1 tbsp oyster sauce, and 1 tbsp sugar. Stir well and set aside.
Make the Scallion Oil
Heat 3 tbsp cooking oilin a pan. Add the scallion whites and fry over low heat until they start turning golden. Remove and set aside.
Add the scallion greens to the pan and fry until they are deep golden brown. Remove the greens from the oil.
The remaining oil is your scallion oil. Pour the prepared sauce into the scallion oil, stir quickly, and pour it into a bowl with the fried scallions. This is your sauce.
Cook the Noodles and Assemble
Bring a pot of water to a boil. Cook 300g dried noodlesaccording to package instructions.
While the noodles are cooking, prepare the soft-boiled egg: place the egg in a pot of cold water, bring to a boil, and cook for 3–5 minutes. Transfer to cold water, peel, and set aside.
Drain the cooked noodles and transfer them to a serving bowl. Add the scallion sauce and toss the noodles until evenly coated.
Garnish with fried scallions, fresh scallion slices, and white sesame seeds. Top with the soft-boiled egg.
